Bespoke-Made Yeast Nutrients Now Marketed By Branson Chemicals

A new one-of-its-kind service has been introduced by Johannesburg-based Branson Chemicals to supply bespoke yeast nutrients to brewers. The wort is first analysed to determine the correct balance of macro and micro nutrients required for the fermentation process. The advantages of the Branson yeast nutrients are to ensure end product quality and in cost savings.
Master Brewer and independent consultant Craig Groeneveld has partnered with Branson in this new development. A deep understanding of the science of brewing led Craig to design a formula that would establish the correct nutrient constituents needed in batches of wort.
In the production of beer, various raw materials such as malts and other components are used as the wort base. Yeast nutrients are then added and fermentation takes place.
“We conduct small 30 liter fermentation trials on the wort at an independent laboratory and provide reports on original extract, alcohol by volume, real extract and real degree of fermentation. The wort is analysed for the nutrient spectrum, so that we can balance the correct proportions of macro nutrients such as calcium, potassium, zinc, phosphate, magnesium and other micro nutrients that will maintain the consistency of end product. Branson then designs a product specific to the wort supplied,” says Craig.
Small scale trials conducted over three months at a major commercial brewery showed positive results. Market potential extends across the spectrum of large and micro breweries.
Mike Binnie, Food and Beverage Divisional Manager for Branson added that “our concept is that one size does not fit all. This is wasteful for brands with a higher malt percentage and can be lacking for lower malt percentage wort. Ultimately we bolster the quality of the end product and effectively reduce nutrient requirements and costs are reduced.”
Apart from the wort analysis, Branson offers clients a twice yearly on-site evaluation of the performance of the wort and production output.
