Food Processing

Food processing is the industrial transformation of raw agricultural products into consumable food products through physical, chemical or biological methods. The sector encompasses activities ranging from basic cleaning, sorting and packaging to complex manufacturing operations such as canning, freezing, drying, fermentation, pasteurisation and the production of ready-to-eat meals. Food processing extends shelf life, improves food safety, enhances nutritional value and creates convenience products for retail and foodservice markets. The industry serves as a critical link between agricultural production and consumer markets, adding value to primary commodities and reducing post-harvest losses. Major subsectors include meat and poultry processing, dairy manufacturing, fruit and vegetable canning, grain milling, bakery production, beverage manufacturing and confectionery. Food processors operate under stringent regulatory frameworks governing hygiene, safety standards, labelling and traceability, with compliance monitored by national food safety authorities. The sector is capital-intensive, requiring specialised equipment for mixing, heating, cooling, sterilisation and packaging, as well as temperature-controlled storage and distribution infrastructure. Global trends driving the industry include rising demand for convenience foods, growing middle-class populations in emerging markets, increasing focus on health and nutrition, and the adoption of automation and digital technologies to improve efficiency and quality control. Food processing has historically developed alongside urbanisation and industrialisation, with mechanisation and refrigeration technologies in the nineteenth and twentieth centuries enabling mass production and long-distance distribution of perishable goods.
